Almond Pumpkin Spice Pancakes!

Since this weeks cookies were just more of the same, Halloween, Halloween, Halloween, I thought instead of sharing cookies, I'd share a recipe!  Obviously I love to cook, otherwise, why would I have started a cookie business.  My love of cooking isn't just for baking and decorating though, I am a true foodie.  I love trying new foods (within reason, no frog legs for me thank you!), new recipes, and especially making up recipes of my own.  The one I'll share this week is my Almond Pumpkin Spice Pancakes.

As I'm sure most of you have a similar problem, it is nearly impossible some days to get any vegetables into my kids, my younger ones anyway.  I'm a big fan of the cookbook, Deceptively Delicious, so I've taken inspiration from some of those recipes.  The Almond Pumpkin Spice Pancakes manages to sneak in not only sweet potatoes but ground almonds as well, two great superfoods!

Ingredients:

3/4 c. milk
2 tbsp melted butter
1/2 cup sweet potato puree
1 egg
1 tsp almond extract
1 cup flour
1/2 cup almond flour (finely ground almonds)
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp pumpkin spice

Combine milk, butter, egg, sweet potato and almond extract in bowl and whisk together.  In a separate bowl, combine all dry ingredients and mix well.  Add dry ingredients and stir well until there are no lumps.  Heat a large skillet or griddle, and coat with cooking spray or butter.  Pour batter onto griddle into your desired size of pancakes, flip once bubbles appear, and cook until brown on the other side.  Serve with your favorite syrup and enjoy! The measurements above are for a smaller batch, but I usually make twice and much and freeze the extra pancakes between sheets of wax paper.  Then, when my kids want pancakes on a morning when I don't really have time to make them from scratch, I just pull them out of the freezer and pop them in the toaster.

Next time I'll share a dinner recipe.  It's a favorite of my 15 year old, Creamy Sausage & Tomato Pasta.  If I tell him I'm making this it's pretty much guarantee he'll stay home for dinner with no arguments!  I'll have to make it again though before I share it.  Since it's another invention of mine, I'll need to write down the actual measurements.  For my recipe originals, I usually just eyeball everything!  Another hint, this one sneaks in more secret vegetables :)

My first dessert table...

We had my daughter Ryann's third birthday party yesterday out at my parents farm.  The weather was absolutely beautiful, low 60's and sunny all day.  It was the perfect day for a Halloween birthday party, complete with a hayride and pumpkin patch for the kids.  They all had a great time, even when no one could seem to break the ghost piñata including my 13 year old niece!  I ended up having to rip it apart and toss all the toys around for the kids!  Toys?  Yes, I put toys in the piñata because after being inspired by my friend Terri over at Crafty Workin Mommy, I decided to try my hand at a treat table.  I figured that with all the candy they'd be getting from that (marshmallow pops, licorice, malted milk balls, chocolate toffee popcorn, a doughnut cake and Dandy Delights cookies of course) they didn't really need any more!  They all had a great time, especially Ryann after she opened all her presents!


The super cute toppers that I added to the doughnut cake were cupcake toppers provided by Alexandra at Enchanted Events & Design.  She also made the tags that are on the cookies I made pictured below.  Thanks again Alexandra!

 My mummy dogs didn't turn out nearly as cool as the ones pictured in the recipe that I looked up, but they kids still gobbled them up!

The changing of the seasons...

One of the things I love about living in Michigan is the changing of the season from summer to fall.  It's not too cold yet, as a couple Saturday Night Live characters would say "sweatah weathah", and there are still a few days sprinkled here and there of 70 to 80 degree weather.  We were even able to go out on our boat this past Sunday and the kids went swimming, in October!  Trips to the cider mill and fall bonfires are some of my favorite things, but the best part by far would be the colors.  Trees burn bright with blazing reds, vibrant oranges and radiant yellows, illuminating the landscape all around us.  Then unfortunately, after about a month or so, the leaves have all fallen... in my yard.  Piles and piles of leaves all over our yard.  Now, it's great fun for the kids of course.  They love jumping over and over again into the giant piles of leaves.  Last year we even made them the setting for our family picture.  I recall many times when I was a kid where my brother and I along with two of our friends would rake leaves at neighbors houses, bag them up and bring them to our house, just so we could dump them back out onto our lawn to get the biggest pile possible.  I'm sure this pleased my dad to no end :)  Once the kids have had their fun, it's time to bag them up.  This part is not fun, so I won't continue to write about that.  Especially since we live in a neighborhood with many, many, many old, huge, beautiful trees.  The number of bags of leaves we end up with usually ends up somewhere north of 60ish.  

So now that I've told you how much I love the fall colors, you can imagine my joy when I received an order for fall leave cookies for the dessert table at a wedding.  These were so much fun to make.  The bride-to-be requested lemon shortbread and almond shortbread.  As she was ordering quite a few I could do multiple flavors since it would require multiple batches anyhow.  I made the lemon shortbread cookies yellow of course, and the almond were done in orange with red accents.  A sprinkling of disco dust gave them the perfect shimmer reminiscent of fall trees lit up by the fiery autumn sun.   Now these are probably the only fall leaves that I have enjoyed bagging!

What a week!

Last week is finally over and the new week of cookies is about to begin.  What a crazy week it was!  My final order to complete of the week was five cookie bouquet centerpieces for my good friend Sarah's baby shower.  Since her and her husband Abe (that's right, Sarah & Abraham, very biblical!) are not finding out the sex of the baby (I love surprises!), I was able to include assorted colors, instead of your standard pinks & blues.  The shower was a lot of fun.  Sarah's sister Kelley, also my good friend, ordered delicious food from A Matter of Taste and cake gems from Marty's Cookies in West Bloomfield.





I couldn't resist making cookies to match the adorable invitations!


These were the favors for each guest made by Sarah's friend Honor.  Each jar contained different flavors of tea, like blueberry white, citrus green and ginger peach.  So cute and such a great idea!

No football tailgate party is complete...

without football shaped cookies right?  Tomorrow is the big match up between the University of Michigan Wolverines and the Michigan State Spartans.  Both teams are currently undefeated and are currently ranked 17th and 16th respectively in the College Football Power Rankings.  My husband would be soooooooo impressed that I know that!  Truth is though, I don't really care, I just had fun with three orders for fans of both teams :)  Two orders for footballs done in both team colors, one to include mini-footballs that I chose to frost with chocolate because, well, chocolate is brown and so are footballs!  Plus, they wanted the mini's in almond shortbread, which is sooooooooo good with chocolate on it.  Sort of reminds me of a Pepperidge Farm Milano cookie, but better of course, because of the almond and because I made it ;)  The third order was for four dozen Dandy Dots in the MSU colors.  I posted one of the pics of the football cookies on Facebook last night, and have made a mental note for next year... make extra!  Once the pic was posted more people wanted them for their game day festivities.  So next year, I'll have footballs ready by the dozen in Maize & Blue and Green & White.  And probably some mini's with chocolate on the side, yum!

Happy Friday everyone!

So many orders....

...but so much fun!  And so little time of course.  This has by far been my busiest week since I have launched my business.  Three dozen butterflies and flowers for a baby shower in Missouri, to be overnighted since the order just came in on Saturday and the shower is the following Saturday, a dozen horses as gifts to beloved nieces, assorted flowers & peace signs as a birthday present from one hippie to another (the gift giving hippie being my mom!), and three orders for the big football match up this weekend between the University of Michigan and Michigan State University.  What good tailgating party doesn't need custom decorated shortbread cookies?  Oh and wait!  One more, five cookie bouquets as centerpieces for my good friend Sarah's baby shower this weekend!  Although that is the first order I received, it will be the last one to be completed since I have the convenience of personally delivering those when I go to the shower :)  So, those will be the last you'll see from this week's bake-fest.

What I can share with you tonight, are the adorable flowers and butterflies that were ordered by Monica in Missouri for her cousins baby shower this weekend.  Her cousin picked out the cutest nursery set from Lambs & Ivy.  Once she sent me the link to the set I knew I'd have so much fun with the cookies.

She'll have them by noon tomorrow, and I'm looking forward to seeing pictures of the cookie on display at what will be no doubt an adorable baby shower!

Halloween is right around the corner...

and the Halloween cookie baking has already begun!  This week I churned out skulls, candy corn and shimmery ghosts in lemon shortbread, spiderwebs, tombstones and BOO! cookies in almond shortbread, cauldrons, bats and cats in chocolate shortbread, and jack o'lanterns in what else?  Pumpkin spice shortbread of course!  Now if I can just keep my hands off of them in the meantime....

Three years ago today (but 10 days past her due date!) my sweet, adorable, smart, funny, crazy little girl Ryann came into this world.  We are loving watching her personality develop, from her little monster voice to her new found love of princesses (much to my tomboy dismay ;).  Happy Birthday to our sweet little girl!
